tagliatelle with white truffle

4 servings



14 oz. or 400 g fresh tagliatelle

3-4 oz. or 100 g unsalted butter

meat stock q.s.

at least 1 oz. fresh white truffle

salt and pepper




Bring a large saucepan of salted water or better meat stock to boil. Add tagliatelle. In the meantime melt the butter with a bit of stock, a tiny bit of salt and pepper. Sauté the tagliatelle by mixing them with the sauce, serve in hot dishes and add truffle shavings and a drop of extra-virgin olive oil.
